Amylase is an enzyme that helps the body digest carbohydrates. Most of the amylase in the body is produced by the pancreas and salivary glands. An amylase test measures the amount of amylase in the blood or urine. Abnormal levels of amylase may indicate a disorder of the pancreas or salivary glands, or another medical condition.
